Paleo Almond Joys

And the giveaway winner from this past weekend is Shirley Perkins! Can I tell you how super 
excited I was to watch Ty draw a name out of that hat? Like super child-like excited. It was awesome.

P.A.J. Who would've thought. Each bite was heavenly. They are already bite-sized, but somehow I
was able to get more than enough bites out of each one. But if you're like Ty, you devour them in
one bite. One in the same, right? Either way they end up in the same place...the toilet.

Speaking of toilets, I'm beginning to think something is wrong with our toilet. It always seems to 
clog when I use it. And it couldn't be something I'm doing, I know that much ;-] You didn't need
to know that. I know that too, but it doesn't stop me from putting it on here.

1 1/2 C unsweetened shredded coconut
1/2 C coconut cream concentrate
(check your local Chuck's, Whole Foods, etc. for various brands)
1/2 C coconut oil
1 tsp vanilla extract
pinch of salt
1 bag Enjoy Life chocolate chips or use the darkest chocolate chips you can find
whole almonds

Throw the shredded coconut, coconut cream, coconut oil, vanilla, and salt into a food processor. Blend together. It will be slightly chunky-like. Place your mixture into mini cupcake liners or if you want, make them big and put them in regular sized liners in a tin. Spoon enough into them to be 1/2-3/4 of the way full. Place an almond in each little bite/liner. Trust me, it's more fun to bite into it wondering where it is. Now melt your can either melt it in the microwave or use a double boiler. I'll be honest, I didn't want to take forever making these or have more dishes to do, so I went with the microwaving. Spoon some chocolate over the coconut mixture in your liners. Put them in your freezer until the chocolate is frozen. 
They were hard when I pulled them out, but I didn't wait for them to soften up. I went for it. I'm sure all of you out there are more patient than I could ever be, so give them a few minutes to sit when you take them out of the freezer. Then enjoy! Keep in your fridge or freezer if you don't eat them all. 
Or just eat them all. I'd love you for that.
