OCD

Secretly I am slightly a weirdo, which is not a secret anymore. Who organizes their scrubs by the types of tops that go with certain colored pants, number one. And two, who rotates their scrubs from bottom to top after they've been laundered. People with OCD do. In fact, it's the one and only time Ty gets slightly irritated with me because I have to have him reach up in the closet to put them in an orderly fashion. If it's not done right, I make him fix it. Gah, I wish I wasn't so weird in that way. Thank goodness it's only one of the two things that are annoying about me! Otherwise, I'm pretty perfect. Kidding. Totally kidding.

So here's what we've got from left to right...
*undershirts organized by color.
*scrub pants.
*bottom half are plain colored scrub tops.
*top half are mix colors/pattern tops that go with random colored scrub pants.
*bottom half are tops that go with brown pants.
*top half are for those that go with black scrub pants.

*ALL are rotated where the ones near the bottom are the recently washed/worn whereas the top is where I pull from when I get dressed for work.

I do it partly because it's one of those OCD things and partly because they never get worn frequently enough to look worn. I'm extending their scrub life and decreasing the need to buy more scrubs. Slightly over the top, but mostly worth it in my brain! So dumb at the same time.

Here's to all those weirdos out there that have a few issues like these. I love all of you for them
and would love to hear your "unique" obsession!

Paleo Taco Salad

Let's be honest...this isn't really a taco salad. For some reason that's what we call it though. There's no chips involved (although you could throw in some plantain chips if you wish) and no lettuce either. So it's absolutely not a salad. And on another note, I may have already let you in on this recipe in the past but I couldn't seem to find it so you're getting it again.

This is one of our go-to meals seeing that it is super quick, easy, and has leftovers for a couple meals. As you all know, we appreciate all three of those things. Give it a whirl and see what ya think!

2lbs ground turkey
2 acorn squash, halved
1 red bell pepper, chopped
1 green bell pepper, chopped
1/2 yellow onion, diced
3/4 C mushrooms, chopped or diced
1/2 avocado, sliced
1/2 tsp garlic powder
salt & pepper to taste
salsa of your choice

Place a tablespoon of coconut oil or olive oil on a pan and heat it on med-high until hot. Throw your bell peppers, onion, and mushrooms on the pan to cook until tender. Add in all your spices as well as the turkey and cook until browned. As your meat is cooking, place your acorn squash halves (2 halves at a time) in the microwave for about 5 minutes or until the squash is nice and tender. This dish is easiest to eat out of a large bowl, so place your halved acorn squash in a bowl and top it with the meat and veggie mix. Dump some of your favorite salsa on the top and give it a few slices of avocado. Gobble up!

Hope everybody had a wonderful holiday and is looking forward to going into the new year.
Only 4 more days until it's 2014. As always, I'm looking forward to all those wonderful/awful
new year's resolutions!

PS-a little thanks to Kelsey E. for introducing me to this little special way back when!
Comes in handy way too often!

After Christmas R&R

Everybody seems to believe that holiday break is time to relax, but it always ends up that we're
running errands, going shopping, preparing for the holiday parties, and getting dinner ready for Christmas Eve and/or Christmas day. So take a moment today, the day after Christmas,
to enjoy some R&R.

Make some coffee, tea, or cocoa, grab that new book of yours, and plop yourself on your favorite
chair or seat on the couch. Take advantage now before all the hustle and bustle starts up again...
or until that first child or yours wakes up to play with his/her new Christmas toys.
Because we all know you won't stand a chance thereafter.

Get that R&R in before it's too late!

Mmmm...A Little Bit of Chocolate Heaven

Who said paleo desserts couldn't be decadent? You were wrong if you weren't a believer. You will
also be in awe when you flip through this book. The photos are fabulous. I could've eaten the
pages. Seriously. But then I realized how awful it would be going down, so I just trusted
that it would've tasted good too. Desserts you wouldn't have thought possible in a
paleo version...well, it was made possible. This gal proved me wrong.
I applaud her, and will continue to after over and over.
Props to you Kelly B.

Now it's time to order your own copy and indulge in chocolate for breakfast, lunch,
and/or dinner. Because you can. And PS-don't forget to invite a friend to
indulge in a piece of heaven.

Thanks M&K for a wonderful Christmas evening & gifts!

Friday Inspiration

Let's be honest...I've had NO time for blogging. So this is all you get. Not as cool, I know.
Tough luck. That's what my mom use to always say to me..."tough luck."
Probably two of my least favorite words, but the best Mom to say them.

Here's to welcoming that Friday holiday traffic, more Christmas sweater parties,
family gatherings, some great food, and wacky neighborhood Christmas lights...
believe me, some of them out there may give you a seizure.

Have a wonderful weekend!
